This Napa Cabbage, Asian Pear, and Carrot Salad is simple and easy to throw together with refreshing flavors. I wrote a bit about Asian pears in my Dakkochi post. I really enjoyed the crisp texture they brought to the salad and their sweetness. The dressing nicely compliments the cabbage, pear, and carrots. This salad makes a great starter to an Asian-inspired meal. I served it with Dak Bulgogi- which I will post in a few days.
I used this Messermeister Pro Touch Julienne Cutterto slice the carrots. It works very efficiently to get uniform strips without much labor.
Napa cabbage (Nappa, Chinese, Celery Cabbage) is a common ingredient in Chinese, Korean, and Japanese cooking. It was originally grown near Beijing, China. It is a long, oval cabbage with a light greenish yellow color. It is a good source of folate, manganese, iron, and zinc. I have been able to find it at most grocery stores and Asian markets in my area.
Ingredients
4 cups shredded Napa cabbage
2 carrots, peeled and julienned
1 Asian pear, peeled and sliced into matchsticks
3 tablespoons vegetable oil
2 tablespoons rice vinegar
2 teaspoons sugar
1 teaspoon soy sauce
1 teaspoon sesame oil
salt and pepper to taste
Sliced almonds
Sesame seeds
In a small bowl, whisk together the dressing ingredients. Refrigerate for at least 30 minutes to let the flavors blend.
In a large bowl, combine cabbage, carrots, and Asian pear pieces. Toss with dressing. Top with almonds and sesame seeds.
