Key West Grilled Chicken

This Key West Grilled Chicken is a very simple recipe with a great soy-lime flavor. We had friends over for lunch, so I prepared the chicken the night before and grilled it when they arrived. They can also be prepared in skewer form. Cut the chicken breasts into 1 1/2 inch chunks before marinating and place on skewers before grilling. Serve with rice and garnish with limes and cilantro.

Ingredients

  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • juice from 1 lime
  • 1 teaspoon minced garlic
  • 4 boneless skinless chicken breast halves

Instructions

  • In a rimmed pan (I used an 8x8 baking dish), whisk together soy sauce, honey, oil, lime juice, and garlic. Add the chicken breasts in a single layer, turning to coat. Cover and refrigerate at least 30 minutes to overnight.
  • Heat grill to high heat and lightly grease. Remove chicken from marinade and grill until cooked through, 6-8 minutes per side.
