Key West Grilled Chicken
This Key West Grilled Chicken is a very simple recipe with a great soy-lime flavor. We had friends over for lunch, so I prepared the chicken the night before and grilled it when they arrived. They can also be prepared in skewer form. Cut the chicken breasts into 1 1/2 inch chunks before marinating and place on skewers before grilling. Serve with rice and garnish with limes and cilantro. The rice in the photo is from Adora’s Box. It is a Filipino dish called Paprika (Java) Rice.
3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
juice from 1 lime
1 teaspoon chopped garlic
4 boneless skinless chicken breast halves
In a rimmed pan (I used an 8x8 baking dish), whisk together soy sauce, honey, oil, lime juice, and garlic. Add the chicken breasts in a single layer, turning to coat. Cover and refrigerate at least 30 minutes to overnight.
Heat grill to high heat and lightly grease. Remove chicken from marinade and grill until cooked through, 6-8 minutes per side.
