Salata Tomatim Bel Daqua is a Tomato salad from Sudan. Peanuts make their way into many dishes in Sudan, like this salad made from tossing together tomatoes, green onions, parsley, and green chili pepper. It is then coated in a peanut butter lime sauce.
Evan pleasantly surprised me by devouring this salad. It must have been the peanut butter coating. He usually isn’t as crazy about tomatoes. I loved the salad and how quickly it came together. Chad said it was just alright. He also isn’t a huge fan of raw tomatoes. Poor guy doesn’t know what he is missing. Fresh tomatoes are one of my favorite things about summer.

Salata Tomatim Bel Daqua (Sudanese Tomato Salad)
Ingredients
- 5 large tomatoes seeds removed and diced
- 4 green onions finely sliced
- 1 small green chili pepper stem removed, seeded, and finely diced
- 1/4 cup Italian parsley chopped
Dressing:
- 1/4 cup smooth peanut butter
- 1/3 cup oil
- 2 limes juiced
- salt to taste
Instructions
- In a large bowl, toss together tomatoes, green onions, pepper, and parsley.
- Add peanut butter to a small bowl, Whisk in the oil until smooth. Mix in the lime juice and salt.
- Gently toss the tomato mixture with the peanut butter dressing.
- Serve immediately.
